Ingredients

1 lbs organic skinless, boneless chicken 2 tsp canola oil 1 ounce honey roasted peanuts 4 cloves garlic 2 tsp minced fresh ginger 1/4 cup green onions 1 tbsp organic soy sauce 2 tsp rice vinegar 1 tsp toasted seasme oil 1 cup fresh cilantro 2 cups shredded napa cabbage 4 wedges lime

Preparation

In a heavy 10-inch skillet, heat canola oil over high heat. Add chicken; cook and stir for 2 minutes. Add peanuts, ginger, and garlic; cook and stir about 3 minutes making sure chicken is well cooked.

Add green onions, soy sauce, rice vinegar, and sesame oil. Cook and stir for 2 minutes more. Remove from heat. Stir in cilantro if desired.

To serve, spoon chicken mixture over cabbage or rice. If desired, garnish with cilantro sprigs and lime wedges.
