Yum, yum, yum! These enchiladas are so good! I ate both of them, despite the 1 enchilada serving listed on the box, with a side of broccoli and thought it was the perfect dinner. The enchiladas are in corn tortillas, which are tender enough in the middle to cut easily with a fork after being cooked, but also crisped up slightly at the edges to give a little bit of a crunch. Inside the enchiladas are beans, corn (PLENTY of corn!), and little pieces of vegetables, all very tender and flavorful. There is a generous amount of sauce on top of both of the enchiladas, which is predominantly tomato-based in flavor, but certainly has a nice kick to it from spices. The dish has a little bit of heat, but not too much, and is really a delicious entree!
