Spicy Bean Salad
Serves: 8 Prep Time: 15 minutes Total Time: 75 minutes
This dish can double as an appetizer and Side Dishes. It tastes lovely with tostidos or just to add a kick to your main entree.


1 can black beans (14.5 ounce) 1 can dark red kidney beans (14.5 ounce) 1 can garbanzo beans (15 ounce) 1 can can pinto beans (14.5 ounce) 1 package package frozen corn kernels, thawed (10 ounce) 1 tablespoon vegetable oil 1 teaspoon cumin 2 tablespoons chili powder 1 teaspoon lime juice 1 jar chunky salsa (8 ounce) 1 pinch dried parsley


Pour beans into a colander, and rinse under running water. In a large mixing bowl, toss beans and corn together with oil, cumin, chili powder, lime juice, and salsa. Sprinkle with parsley, cover, and chill.
