Preparation
First, lightly saute (2 minutes) zucchini, tomato, green pepper & olives in small, 8 inch non stick frying pan, coated with 2 sprays of spray oil. Whisk egg and 1/2 teaspoon of water together and add to vegetable mixture. Next add shredded cheese. Set the timer to 1-2 minutes seconds, and cover the pan. Serve when cheese is melted.
