Cook chicken well in skillet sprayed with two sprays of oil. Remove chicken from pan. Combine all ingredients (except for tortillas) in a large bowl and toss so that all is lightly coated with dressing.
In a skillet warm tortillas (so they are easier to handle) while they are warm scoop about a 1/2 cup of chicken mixture onto tortilla and wrap like a burrito. Wrap in foil and place in 325 oven for while you are assembling the others. I left them in the oven a few minutes so the cheese could melt. Serve while warm.
