What other way to describe Naturally Nora's Sunny Yellow Yellow Cake Mix than to say they reminded me of spring- fresh and well "Sunny" ! I used applesauce in place of the oil that was called for (and skim milk instead of whole milk), as I usually swap applesauce for oil in muffin or cake recipes.
Starting with the preparation- it was certainly easy. I poured the delicious smelling cake mix into the bowl with the skim milk, applesauce and 3 eggs. Then, I took out my blender and the ingredients easily mixed together- hardly any bumps! It was a smooth and pale yellow colored batter.
I decided to make cupcakes instead, and I didn't quite get 24- I ended up getting 22 small cupcakes. They turned a golden brown on top once cooked, but still were yellow in color. As for the taste- these were actually quite good! They were pretty sweet, but not overpoweringly so, and had a nice vanilla flavor to them that I really enjoyed. I actually thought there was even a little bit of lemon flavor in here, although I didn't seem to find any indications of that in the ingredients in the cake mix. Texture wise, they were a bit chewy and not as fluffy as I had expected them to be, but were still soft and quite enjoyable.
