We had a mixture of opinions about this one. Shabtai Gourmet's Raspberry Roll is gluten-free, soy-free, and lactose-free. With these things in mind, the texture was pretty awesome. Many people are skeptical of gluten-free products, so we did a little investigating. How exactly does gluten affect the foods we eat? Gluten is a protein found in wheat and it is what makes a dough "elastic," or chewy. It plays a pretty large role in the kneading process: it is activated through kneading and water and is what allows bread to rise. While some may believe that gluten-free products are dry, we learned that gluten could actually be a potential factor in the staling of bread. Interesting! More gluten is used in bread than in cakes, which is probably why the texture of this cake was largely unaffected. The cake part was rich and the flaky coconut added a nice texture. Some of us found it too tart. Heather thought it was "more tart than cake,"and Hayato said it "leaves a bad after taste." But others, like Lori and Steve, enjoyed the tartness. Our conclusion: you either love it or hate it.
