Now, I am not a vegetarian by any sense of the imagination, but one day I was strolling the frozen foods section, and in effort to keep that spending down (too much eating out) I decided to pop one of these babies into the old shopping cart. (Never thinking I would actually EAT that thing). Well, meanwhile, Friday during the great blizzard of all time, I was snowbound, as were many of my eat out brethren and I had NOTHING in the house to eat. (Except my ever present handy, dandy bottle of chardonnay.) But I searched and searched and then remembered my Veggie Purchase of this Garden Lites Spinach Souffle. Well beggars can't be chosers, and starving I was (being that even the local pizza joint was locked and shuttered against the drifts). So I popped it in the microwave and out it came, sizzling and hot! I took a bite, expecting it to be all bland and soggy and boy was I in for a surprise! It tasted close to my very own spinach quiche recipe--slightly less cheesy, but very satisfying none-the-less. I schmeared a bit of dijon mustard on the top, and viola, a happy camper was I! At only 140 very fat free calories, 2 Weight Watchers (r) Points, I was even happier. At $3.99 it was a heck of a lot cheaper than eating out. In fact, I am even going to buy some more today at Whole Foods. Cheap lunch and all that!
