Cherry Brook Kitchen Chocolate Chip Cookie Mix

Ah, nothing like a chocolate chip cookie. Ooey-gooey chocolate chips, and a buttery rich, sweet taste.
Well, I was in the mood for chocolate chip cookies this morning, and conveniently, I had a box of Cherrybrook Kitchen Chocolate Chip Mix on hand. According to the front of the box, this mix is vegan, all natural, egg free, dairy free, and peanut/nut free.
At first it was easy- I added 1/2 cup of butter, 1/4 cup of water and the mix to a bowl. I liked that there were a decent amount of chocolate chips, that were quite large, too. Then I started to stir it with a spoon, and had a bit of difficulty. It was rather dry and crumbly, not really mixing thoroughly. I added just a bit more water, and decided to mix the rest by hand. Then, after rolling the cookies into little balls and baking them, I noticed that they did not spread out like I expected them to. Usually when I made cookies in the past, I always spread out each heap of dough knowing they would expand. With these cookies however, they sort of "puffed up" rather than spread out.
Nonetheless- still a rather tasty cookie! After letting them cool, they became rather crunchy and crispy, and much harder than I had expected. I do wish they were a bit softer, but the taste made up for the texture. They were buttery and sweet, with a rather powerful chocolatey taste (which I guess is from all the yummy chocolate chips!). They were sweet without being too sweet, and were actually quite good. I can see myself enjoying these with a glass of milk- they are a good cookie for dunking!
