Amy's Kitchen never seems to disappoint me when it comes to making delicious and nutritious meals. The Brown Rice and Vegetables Bowl has a lot to offer. It contains brown rice, broccoli florets, mushrooms, onions, and tofu. The rice was fluffy, not chewy, and absorbed the flavors of the meal and the sauce quite well. What I really liked was that the pieces of broccoli were big, not bits of broccoli, and the tofu chunks were quite large as well. The tofu was actually the best part, in my opinion. Super flavorful, and just the right consistency. The mushrooms and onions added nice flavor to this meal, and were also not too mushy, but just right. Another good thing about this meal was that it wasn't too salty tasting, but still provided a lot of flavor. The protein count is a bit low for my preferences at only 9 grams per bowl, so I added some extra protein to this dish to make a more filling meal. I will definitely buy this bowl again!
