Amy’s Non-Dairy Pot Pie combines great taste with nutrition and is the ultimate comfort food. While Pot Pies are notorious for being loaded with calories, Amy’s Non-Dairy Pot Pie is not. This vegan pie is packed with vegetables and a mouth watering sauce. An added bonus is that it is non-dairy for those of you who are lactose intolerant. Amy’s pot pie tastes best when you stick it in the oven for the full 40 minutes with the tin foil on top. If you’re in a hurry, microwave for 3 ½ minutes and then transfer to the toaster over for a minute or so to crisp up the crust. It’s flaky and crisp, and I love breaking off a piece of the top and scooping up some of the veggie mixture. The vegetables consist of crisp and sweet peas and carrots, fluffy square chunks of potatoes, and savory, soft and perfectly seasoned tofu. Overall, this pie is amazing. It leaves you feeling satisfied and tastes just like homemade
