PB Jenny

hey there friends and thank you so much for visiting my page =) In a few short words I am a 19 year old English major at Sacred Heart University with a passion for family, love, creativity, yoga, and i kind of like peanut butter too ;). Sure, those are just a few tidbits about me but what is the story of the girl behind the jar?

I like to think of myself has having a diverse fashion style. I dabble in chic wear, sporty wear, vintage wear, lazy bum wear (perhaps too often) and usually switch it up from day to day depending on my mood. Yesterday, for instance, I was clearly channeling my inner prepster. All I was missing was a tennis racket and an argyle sweater.

headbands = love

These shoes are a 7 1/2. I’m an 8 1/2. Beauty is pain.

I rocked the look while running some errands with Gingie. Some kashi golean and almonds tagged along for the ride.

Gingie and I set out to buy him new shoes, and came home with 2 new shirts and a pair of shorts for him. I’m a bad influence and I don’t mind admitting it. Afterwards, the dude jetted off to work and I jetted home to pleasuretown, aka – the kitchen.

For some reason I had been craving tuna all day and luckily found a can chilling in the back of the pantry that I’m pretty sure has been there for 3 years. Yay for non-perishables!

I mixed the tune with a smidge of cottage cheese, mayo, & TJ’s garlic aioli mustard, spread it over a multigrain tortilla, topped with apple slices and spinach, and warmed on the stovetop quesadilla style. A tunafish quesadilla? That sounds way less appetizing than it was.

carrots, celery, apple slices, kashi honey sunshine, and almond butter were also consumed.

The rest of the afternoon all I could think about was cheese, delicious, melty cheese. I hit the fridge to see what I had to work with. We were lacking in the shredded, sliced, and crumbled department, but fortunately I uncovered a few packages of cheese de string. I’ll take it. Inspired by this little light of mine, I tried out her eggplant parm. I followed the recipe to a tee but topped with a bit of wheat germ for some added crunch.

My salad was ridiculously large and topped with a veggie burger, grape tomatoes, more cheese, & bleu cheese dressing. + brussels and toast with hummus. This meal took me forever to eat and I loved every second.

After the fact I dressed again and headed to a bonfire at mi amigos casa. Actually, it was in a field about 2 miles deep in to the woods behind my friend’s house. My shoes are destroyed, my hair still smells like smoke, but I still have my dignity. Success

What’s your signature style? Do you try to mix it up or tend to gravitate towards the same looks?

Any good tuna salad recipes? I’m still craving it and seriously considering part deux for lunch today. Mercury who?

Woo weekend. Enjoy!
