Do you ever have those days when you do absolutely nothing with your life? That seems to be the case for me for the past few weeks but yesterday was extra unproductive. Thus, today’s post will be be completely devoted to what I ate because food was totally the highlight of my day. You don’t mind, do you?

I woke up with a ridiculous craving for chocolate and coconut or more specifically, a samoa girl scout cookie. Unfortunately, my dad dominated the 5 boxes that my mom ordered about a month ago so I was left to fend for myself.

I considered oatmeal, but for some reason a big bowl of warm moosh has not been appealing to me this past week. Pancakes, on the other hand, sounded mighty fine.

I tossed together a batter comprised of…

  • 1/4 cup oats
  • 1/4 cup whole wheat flour
  • 1 tbsp cocoa powder
  • 1/4 cup egg whites
  • 2 tbsp coconut milk creamer
  • 1 tsp shredded coconut
  • mooshed banana

I am a huge fan of this creamer. Though it takes about 3x’s the serving size to get a real “coconut” flavor, it’s heavenly.

I topped the pancakes with smooshed strawberries, naturally more, and….

 

coconut nectar! I spotted this in the grocery store and snagged it without a second thought.

 

The concept of a thick coconut flavored syrup appealed to me immediately. Unfortunately, the coconut flavor was seriously lacking. Sadface. The nectar is definitely sweet; but tastes more like honey than coconut. I’m dissapointed, not gonna lie.

Cleaning the kitchen after breakfast may have been the most activity I did all day.

Lunch was slightly boring, but delicious nonetheless: TBST (turkey bacon, spinach, & tomato) with light mayo (in honor of snackieboo) + ‘rots, celery, hummus, cheerios & almonds.

When snacktime rolled around I decided to give my new TJmaxx dishware a whirl.

 

Presh, no? I filled the little guy with some vanilla oikos, strawberries, & chia seeds.

As dinner time neared I developed a huge hankering (I love that word) for potato salad. Interestingly enough, I have never been a huge fan of potato salad and always opted for its macaroni infused competitor. Regardless, I went with it. I chopped and boiled a red potato then combined it with a “dressing” consisting off plain greek yogurt, TJ’s garlic aioli mustard, dill weed, and red onion.

Hankering cured.

Though I probably could have made a meal out of potato salad alone, a girl needs her protein and greens so “fried” chicken, spring mix salad with grape tomatoes & blue cheese, and some crackers also made an appearance.

White overload.

For the chicken I just dipped a boneless/skinless breast (te he he, I said breast) in a beaten egg then 1/4 cup cornflake crumbs + dash seasoning.

Dessert was a banana nut vitamuffin with butter ’cause I like it like dat.

 

Oh food – the remedy for even the most boring of days.

Have you ever had high hopes for a food and then was extremely dissapointed?
I’m not going to count the coconut nectar out just yet, I think I just had too high of expectations. Similar to my sentiments towards Transformers Two: it just didn’t “wow” me like I thought it would.
How do you keep yourself when you’re bored?
