I was hesitant at first approaching Amy's Single Serve Pesto Pizza- this pizza had 19 grams of fat and only 3 grams of fiber, would it satisfy me for a meal?
Actually, it was. The pizza was covered with medium sized broccoli florets, and bits of tomatoes, along with some tasty mozzarella cheese. The broccoli and tomato pieces were both very soft, which was good in my opinion, as I hate when toppings are undercooked or hard. What I also liked was that it tasted very fresh, and the cheese browned quite nicely in my oven. The crust was soft and doughy underneath the toppings, and quite enjoyable.
What I didn't really detect was much of a pesto flavor- I really just thought I was eating a pizza topped with cheese, broccoli and tomato pieces. It was still tasty, but I think I will stick to pizzas with tomato sauce rather than pesto, as I felt something was missing from this pizza, and it was a tad bit dry.
However, paired with a vegetable, this still made quite a tasty dinner.
