Amy's Veggie Steak and Gravy- you deserve a special place in my heart, and on my plate. This to me, is comfort food at it's best. This meal has a veggie steak, green beans, and mashed potatoes. Starting with the veggie steak, it sort of resembles a piece of meatloaf, with visible pieces of celery, oats, and other small vegetables. It has a chewy, yet soft consistency, with an occasional "bite", due to little peices of walnuts. The gravy covering the veggie steak is absolutely delectable- rich and creamy, I especially loved the bits of gravy that crisped up in the microwave.
Onto the mashed potatoes, they are fluffy and airy, but also just a tad but dry and plain. I simply added just a small pat of butter and that really helped bring out the flavor. I liked that there was a rather generous portion of the mashed potatoes.
Lastly, the green beans. A small pile of cut green beans, that were firm, but very fresh tasting. They were excellent when eaten with the mashed potatoes. However, I would have preferred them to be just a bit softer.
