Amy's Macaroni & Soy Cheeze

Amy’s Kitchen dishes out a creamy, macaroni & cheese entree that caters to those are lactose intolerant, or who just crave comfort food with the convenience of a single serving. There is a decent amount of the plump, soft but not too chewy, elbow macaroni smothered in a "soy cheeze" sauce. If cooked in the microwave, I recommend you don’t use the full cooking time unless you want crispy "cheeze” edges. The taste is mildly cheesy and a wee bit bland. However, a quick grind of some sea salt really brings out the flavor of the cheese. A bonus is that Amy’s Kitchen easily fools us to believe we are consuming actual cheese and not soy cheeze, for the taste and texture are very similar. The soy cheeze sauce tasted cheddar-y, but also similar in flavor to cheez-its or goldfish crackers. It is thick and sticks to the noodles, forming "clumps" of macaroni. This Mac & Cheeze has much more of a homemade, oven-baked taste than the traditional brands of Velveeta or Kraft. If you are craving something that tastes like "Mom" made it, and are in need of some comfort food, look no further than Amy’s Macaroni & Soy Cheeze!
