The other day this gorgeous lady went on a healthifying spree of all of her favorite desserts. It sounded like a fun way to get my culinary creative juices flowing so this morning I decided to follow her lead.
Strawberry Banana Almond Cheese Cake Bake
(adapted from the Edible Perspective’s Oat Flour Bake)
- 1/3 cup oat flour
- 2 Tbsp wheat germ
- 1 egg
- 1/2 banana (mashed)
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1/4 cup milk

I’m always really skeptical (and often times disappointed) when “healthified recipes” claim to taste like the real thing, so I will be completely honest in telling you that this didn’t taste like actual cheesecake, at all.
Rather, it tasted like a healthy banana bread with cream cheese, strawberries, and almonds which – don’t get me wrong – is delicious in it’s own right, but certainly not cheesecakey.
Sara Lee, I am not.
Fun fact: there was a point in my life when I could dominate an entire Sara Lee cheesecake. I have no shame in my game.
Because I’ve been feeling a little frisky in the kitchen as of late (do me a favor and don’t take that the least bit literally) I’m thinking of trying out some more “healthified” recipes this week. Any recommendations?
