Guess what I just did?
Baked! Well, kinda.
and it was good.
Really good.
and it was like, ridiculously simple.
Oh, and only took 1 and a half minutes to cook in the microwave.
boo-yah.
- 1/4 cup corn flour
- 1 Tbsp honey (can use maple syrup if you want. Or both. Why not?)
- 1/2 banana [mashed]
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 Tbsp flaxseed meal
- 1 Flax egg (1 Tbsp flaxseed meal + 3 tbsp liquid)
- a few splashes of milk (coconut milk is bomb.. just saying)
- 1/4 tsp baking powder
Mix all ingredients and cook in the microwave for 1 min 30 seconds.
After cooking, the bread was really soft and gooey, which I loved – but I decided to toast it for the “golden brown crust” effect, as Giada would say.

Do you prefer single serving recipes or making huge batches of foods? I am all about cooking for one and adore any recipe catered to the solo chef. While huge batches of food are great (hello, leftovers) It’s so much easier for me at school to make an individual serving rather than stocking the fridge with tupperware containers filled with leftovers that I’ll probably never eat anyway. Plus, I take up enough fridge space with my large and in charge containers of greek yogurt and almond butter.
What are some of your favorite single serving recipes? I adore all of Jess and Ashley’s breakfast bakes and Katie’s single lady cupcakes! I think I’ve got the breakfast/snack thing down but I always struggle to find lunch and dinner recipes for myself.
