coco-nutty pancakes

Step 1: Accept and embrace the fact that you are an indecisive flour addict.
Step 2: Mix dry ingredients
- 2 Tbsp peanut flour
- 2 Tbsp coconut flour
- 2 Tbsp whole wheat flour
- 2 Tbsp wheat germ
- 1/4 tsp baking powder
- cinnamon and sweetener to taste
Step 3: combine dry ingredients with wet
- 1 egg
- 2 Tbsp greek yogurt (I use vanilla)
- 1/2 cup milk of choice (vanilla soymilk for moi) **note, usually I don’t need an entire 1/2 cup of milk. I just add it to the batter until it reaches the right consistency and pour the rest in my coffee**
Step 4: cook pancakes on the stovetop over medium-high heat until golden brown (that phrase always makes me hungry)
Step 5: Toppings to boot. This is the most crucial step and nut butter is mandatory.
Step 6: Demolish.
I know the ingredients and varying flours are slightly tedious (not to mention, expensive) but these pancakes are worth it.
…like, really worth it.
