Oh breakfast, if only it were socially acceptable to eat you all day every day.

I have been craving chocolate as of late (I blame Ashley and her decadent buckwheat bakes. Speaking of which, anyone know where I can find buckwheat? I want. No, I need) so this morning attempted to whip up a batch of chocolate soccakes.

I succeeded.

Choccakes (chocolate socca pancakes, naturally) for one:

  • 1/2 cup garbanzo bean flour
  • 1/4-1/2 cup milk of choice (I used vanilla coconut!)
  • 1/3 mashed banana
  • 1 Tbsp cocoa powder
  • 1/2 tsp vanilla extract

cooked pancake style on the stove top over medium heat

Toppings:

with berries and banana slices to boot!

This morning while I was uploading pictures from my camera I realized that I totally forgot to share with you some fabulous belated birthday gifts that I received from my family last weekend! I know you’ll appreciate them :)

From my dad…

a new lens! I’m in love. It’s super light weight and the pictures are really crisp! I think Allie has the same one and let’s be honest, she has some of the best pictures around blogworld. Hopefully this new lens can get me on her level! I haven’t played around with it *too* much (yet) but I shot this picture at home. Lovely, no?

From my mom…

Why didn’t I think of this? Normally I only eat 1/2 banana with breakfast and the 1/2 goes to waste (because I refuse to eat the edge that turns all mooshy brown. I’m such a fruit diva). This will totally come in handy.

I’m off to get my Wednesday started! I don’t have any classes today which means cleaning the apartment, catching up on homework, and running some unnecessary errands. Happy Hump Day, boos!
