My mom always taught me to never do something just because everyone else was doing it.

“If everyone else was jumping off a bridge, would you jump off a bridge too”.

Well, probably not, unless they were jumping in to a pool of breakfast bakes.

Everyone seems to be LOVING on Ashley’s brilliant recipe as of late, so, as much as I love and respect my mom – I had to reject her advice and jump on the breakfast bake train. Why? Because all of my blogging friends are doing it!

*sidenote: I know this post completely contradicts what I said yesterday about not allowing yourself to be too influenced by other bloggers and doing things because you feel like you should, but warm moist blueberry muffin-esque breakfasts topped with almond butter and cream cheese are the exception. K?**

My contribution to the breakfast bake revolution:

Blueberry Yogurt Muffin
Bake for One:

  • 1/2 cup oat flour
  • 3 Tbsp wheat germ
  • 2-3 Tbsp greek yogurt (one heaping spoonful)
  • cinnamon
  • 1/4 tsp baking powder
  • 1 T maple syrup
  • 1/2 tsp vanilla extract
  • blueberries
  • 1/4 cup milk

You can do the whole “combine dry, combine wet, blah blah blah” thing but I just plopped ‘em all in a bowl and mixed. Worked fine for me!

The bake didn’t really hold together too well (which I attribute to the fact that I didn’t use an egg or egg substitute – ’cause I’m rebelling against flax) but I didn’t mind one bit.

I enjoyed this breakfast with a side of yogurt, raspberries, and THE MOST SUPPORTIVE, UPLIFTING, HEART MELTING COMMENTS EVER!!

You all had so much insight and wisdom to contribute to yesterday’s discussion and it seems as if the topic was one that was concerning a LOT of other bloggers as well. I’m really reassured to know that I’m not the only one that needs to work on becoming a little more healthfully unhealthy :)

Are there any trends that you currently, or have previously, followed because “everyone else was doing it”: Although now I try to march to the beat of my own drum, when I was younger and slightly more insecure I definitely followed trends in order to be more “accepted”. Case and point: the fact that my entire wardrobe in 7th grade consisted on Abercrombie and Fitch graphic tees and polos. Despite the fact that it was totally unnecessary for me to insist my mom buy me $70 sweatshirts and jeans just so I could broadcast the notorious Moose logo, I also really didn’t care for those styles. I shoved my body in to tight spaghetti top tanks and barely there shorts for the sake of wearing what my friends were wearing rather than suiting my own body. Glad I grew out of that phase! Although now I definitely follow different trends in terms of fashion and pop culture, I do so because it actually appeals to me – not because I feel like I need to in order to liked. I also have the fabbie fabbiest friends who love me no matter what so I don’t have to worry about those things :)

Time for some R&R with Gingie. Ciao for now :)
