After yesterdays lackluster breakfast, I figured I had to give the oatflour pancakes another shot, this time with sufficient toppings.
I altered Kayla’s recipe a tad and came up with the this:
Oat Flour and Wheat Germ Flaxseed Pancakes
with chocolate coconut fudge sauce

Pancakes

- 1/3 cup oat flour
- 2 Tbsp wheat germ
- 1 Flax egg (1 Tbsp flaxseed meal + 3 Tbsp liquid)
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup almond milk
- sweetener to taste
- pinch of salt
topped with almond butter and a drizzle of
coconut chocolate fudge sauce
This was definitely the best breakfast I’ve had in awhile. For some reason warmer weather always compels me to crave pancakes like no other. They’re such a great canvas for a creative toppings and trying out different flavors and flours, no? Some recipes that I have bookmarked…

Do your meal preferences tend to vary by season? Mine definitely do. For me, summer is all about over night oats and pancakes, fall necessitates all things pumpkin, and winter is anything comforting and warm.
