Lisa, the Health Nut

I'm lisa and I loooove healthy food!  The lifestyle I chose to live is eating only natural or organic food products, minimally processed whenever possible.  What I can't stand is that people may  automatically assume all "health food" that I eat isn't flavorful or tasty.  THIS IS NOT TRUE!  Why would I eat stuff that doesn't taste good?  So my mission is to spread the word that "healthy" does not mean "tasteless".  Healthy food can be just as yummy as the not-so healthy types!   I'll let you know what foods are good, and which ones aren't so good. :)

EVOL Burritos Tofu & Spinach Saute and Pork & Green Chile Burritos

In an effort to stay out of rut of eating the same things over and over again, I decided to switch things up a bit for lunch today. Conveinently, the nice people over at EVOL Burritos sent me some of their all natural burritos a little while ago, so I had some frozen goodies awaiting me.

So, instead of my usual, I decided to try the Tofu & Spinach Saute burrito, alongside some applesauce for dipping (you know me!), and a chopped apple for some added crunch. This one is vegan, made with 80% organic ingredients, and uses a whole wheat tortilla with some yummy filling inside. According to the wrapper, in this burrito there was “tofu sauteed with spinach, herb roasted skin-on potatoes, black beans and authentic tomato salsa”. It sure sounded yummy!

I used the microwave method of heat 1 minute, flip over, heat 1 minute, but I reccommend if you ARE going to do it this way- pop it in the toaster oven for a little bit after to crisp up the edges. My tortilla was a bit chewier than I liked it to be, but that was obviously from the microwave.

The burrito doesn’t seem too big, but when you cut open into it, it’s PACKED with filling. It was oozing with black beans and spinach, which were soft and quite flavorful. There was very strong onion and pepper/herb flavor throughout the whole burrito, which was tasty! There were sporadic chunks of both potatoes and tofu, the potatoes were starchy and soft, and sort of reminded me of a potato knish. The tofu was a surprising yellow color, but very flavorful, and had quite a bit of a kick to it. It wasn’t too salty, and went great dipped in my all natural applesauce.

Overall, 4  stars. This burrito was tasty, FILLING, and low in calories and fat! It also was packed with veggies, and made a very satisfying lunch. I think it would be perfect on the go, or maybe as part of a meal with an extra veggie or fruit like I did. Either way, if you are a burrito person (or need a vegan option), I would give this a try!

Onto the Pork & Green Chili Burrito- I had my brother try this one (seeing as I’m a pescetarian), and he really enjoyed it! Again, it was a huge tortilla, bursting with filling, and it sure smelled absolutely delicious. You could definitely smell the spiciness that filled the kitchen once popped out of the microwave. It wasn’t too spicy for him, but he’s also one of those who can put hot sauce on just about everything! He also enjoyed the bean flavor it provided, and gave it 4 1/2 stars. Thanks for the help, bro! 8)
